Hi, my name is Hagay and I live on Kibbutz Einat where I bake my breads in a wood fired oven that I built in the backyard. I am a fifth generation baker, bread is an inseparable part of my family, my memories, and who I am.
I started my professional training at an established bakery in Paris, Le Moulin De La Vierg, where I baked for the first time using a wood fired oven. After working for a few years in local bakeries in Israel, I extended my training with an agricultural baking course at Paysan Boulanger in Brittany, France. I continue to read, study, and delve into the endless profession that is baking.
This year I started another personal project, sewing my own seeds of various ancient grains originating from Israel in order to bring back the flavors and textures of this land, and creating local bread and culture in its truest sense.
